Easy Vegan Scones

 

Scones are my favorite things to bake. Part of it is nostalgia because my mom used to make them as an after school snack. The best part about them is the simplicity. My simple vegan scone recipe has a few basic ingredients and takes under 30 minutes to bake.

 Scones are very easy to make, and it takes about 15 minutes to prep.

The smell of baking them is so pleasant; I love how my house smells after I bake them. You can adapt this recipe to incorporate your favorite mix-ins.

Ingredients

Dried Ingredients

  • 1 cup all-purpose flour
  • 1 cup of Cake flour (if you don’t have cake flour you can use all-purpose)
  • ¼ cup of raw brown sugar or regular sugar
  • 1½ teaspoons baking powder
  • ¾ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 4 teaspoons of vegetable butter cold
  • 1/2 cup Craisins dried cranberries
  • ¼ cup of sliced almonds

Liquids Ingredients 

  • 4 teaspoons of Just Egg, plant base egg replacement
  • ¼ of unsweetened almond milk
  • Zest of 1 organic orange (I use the zest of the whole orange before I squeeze the juice)
  • ¼ or 1/3 cup of Orange juice all depends on how big the orange is I use a medium 1 whole orange.
  • ½ of vanilla bean. You can replace this for 1 tsp of vanilla extract.

Step by Step Instructions

Step 1

 Preheat oven to 400°F.

Step 2

Combine dry ingredients in a bowl and using a pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in cranberries and the almonds then make a well in the center. Set aside.

Step 3

Combine just eggs, almond milk, orange juice, and orange zest. Add mixture into well in flour mixture.

Step 4

Mix everything with a whisker making a sticky kind of dough (see picture)

Step 5

Line a baking sheet with parchment paper and with a spoon scoop the dough and place it about 2 inches apart from each other.

Step 6

Bake for 15-20 minutes or until golden. Remove scones from baking sheet.
